Filleting Australian-produced toothfish (Dissostichus eleginoides), the white gold of the Southern Ocean. They are cleaned up at sea and we receive these as a 8-10kg HTG trunk which is then scaled, filleted and packed for export worldwide. If you're eating Chilean seabass/black cod/toothfish in New York it might be one of mine!
I can turn out a fish in under a minute, but this video is a wee touch more leisurely.
These are a MSC and Monterey Bay certified sustainable fish.
