This is another One Pot Pan winner... Just sweat off a load of onion and garlic then throw in your spices. Cumin, coriander, garlic powder, aleppo pepper. Pop in your washed rice, cover with stock and lay in your chicken thighs. Make a little cartouche with some grease proof paper then throw in the oven! 30-40 minutes at 180c It's great if it burns a little for extra flavour.
