Grilled Chicken Breast Stuffed with Spinach, Cheese and Sun Dried Tomatoes cooked on Big Green Egg

This grilled recipe is an easy one for Stuffed Grilled Chicken Breasts.
I start with a chicken breasts and use a pocket. Then I place in sun dried tomatoes, wilted spinach and thick-sliced mozzarella cheese. Top it with Killer Hog's AP Seasoning and secure with skewers.
For seasoning on the outside of the grilled chicken breasts, I used Killer Hogs AP Seasoning and then Killer Hogs The BBQ Rub.
For this cook I used my Big Green Egg - and created a two-zone fire with all my hot coals on one side and a void on the other. I placed my grilled chicken breasts on the cool side of the grate and allowed them to cook for 20-30 minutes.
Once the grilled chicken breast reaches 135 internal, it's time to move them to the hot side directly over the coals. I set my timer for 4 minutes and flip the chicken breast over until they reach 165 internal.
When the stuffed grilled chicken breast is ready, remove it and allow it to cool for 5-10 minutes. Just remember to remove the skewers before you dive in!
