This is how You make incredibly delicious and crisp sourdough bread rolls (exactly the way how we like them over here in Germany).

Recipe for the default dough (wheat):
- 400g of wheat flour (6 rolls)
- 240-320g of water (60-80%). This depends on your flour. For all purpose flour (German T550), go for 60%, increase if your flour has more protein (gluten). The higher this value, the softer and chewier they will be.
- 40g of sourdough starter (10%)
- 8g of salt (2%)
Spelt version:
- Exactly the same as the wheat version
Rye, Emmer, Einkorn, old Spelt:
- Go for around 240g of water. Mix all together, no need to knead.
- Put your dough into a elongated shape, shaping isn't possible with this kind of flour, so don't bother
- Refrigerate them like shown in the video
- Bake them
