COTTAGE-DILL DIP (pg 88)
1/3c skim milk*
1 to 2 tsp dill pickle juice
1 - 12oz container dry cottage cheese*
1/2tsp onion salt
1/4c finely chopped dill pickle
2Tbsp finely chopped canned pimiento
Place milk, pickle juice, cottage cheese, and onion salt in blender container; blend until smooth. Pour into small bowl. Stir in chipped pickle and pimiento. Chill until ready to serve. Serve with vegetables. Makes 2 cups.
*I substituted regular cottage cheese for the dry cottage cheese and omitted the milk.
PINEAPPLE-ORANGE YOGURT DIP (pg 36)
1 - 8 1/4oz can crushed pineapple, well drained and chilled.
8oz orange yogurt
4oz whipped cream cheese
1/4c flaked coconut, toasted
2Tbsp packed brown sugar
Milk
Fruit dippers
Combine drained pineapple, yogurt, cream cheese, toasted coconut, and brown sugar. If necessary, add milk for dipping consistency. Chill until serving time. Garnish dip with ornage slices, if desired. Serve with assorted fruit dippers. Makes 2 cups.
HOT BROCCOLI DIP (pg 34)
2 - 10oz packages frozen chopped broccoli
2c dairy sour cream
2 envelopes beef-flavored mushroom soup mix (I substituted onion flavored mushroom soup mix)
2tsp Worcestershire sauce
2 cloves of garlic, crushed
Assorted crackers
Cook broccoli according to package directions; drain, reserving liquid. Add water to liquid to make 1cup. Place broccoli, broccoli liquid, and sour cream in blender container. Cover; blend till smooth, stopping to scrape down sides once or twice. Pour into saucepan. Add soup mix, Worcestershire, and garlic; heat through. Transfer to fondue pot; place over fondue burner. If dsired, garnish with parsley and lemon. Serve with crackers. Makes 4 cups.
