Fish of this family are characterized by their flat bodies, forked tail fins, and long pectoral fins. Silver pomfrets are usually silver/white in color, with few small scales.
Simple tips to remember when purchasing fish:
1) SKIN – Shiny skin with slime on the surface is a good sign that the fish is fresh and good quality.
2) FINS – The fins should be clearly defined and perky, not scraggy or broken.
3) GILLS – A moist, shiny, and pink or red gill is a great sign that the fish is fresh and good quality. Stay away from fish that has brown or faded gills.
4) SMELL – Remember fresh fish should smell of the sea not fish. Also make sure that the fish smells appetising and not of a smelly odour that you hope will disappear when you cook it.
5) EYES – Fresh fish should have bright clear eyes. Stay away from fish that have cloudy, sunken or red blotched eye
Butchering a fish is quite not an easy task, but can be done just by keeping few techniques in mind, like
Trimming, scraping, sliding, chopping and ofcourse cleaning
I have used, silver pomfret fish which has smooth skin.
So it doesn't need any scraping.
Method:
1.TAKE OUT THE FINS FIRST, INCLUDING SIDES AND TAIL
2.SLIDE THE HEAD, GILLS SHOULD BE VISIBLE
3.TIME FOR SOME ACTION!! USING FINGERS PULL OUT ALL THE PARTS FROM INSIDE OF THE FOSH AND WASH IT THOROUGHLY.
