This Ridge gourd fry is generally offered to who got fever, who had surgery and new mothers ( who gave birth to baby) . This fry is very healthy and delicious also. This is authentic recipe.
Genarally for pathyam curry, don’t use green chillies and red chilli powder . you can use only dry red chillies.
Don’t close the lid throughout the fry
As default salt is there in ridge gourd, salt consumption is less for ridge gourd recipes. so, take care while adding salt
Check the taste of each ridge gourd very carefully. if bitter taste, then don’t use that one
if garlic pods are more, then fry ( pathyam curry ) would be more tasty
Genarally, sesame oil prefer for pathyam curry
RECIPE OVERVIEW:
preparation time = 20 minutes
cooking time = 20 minutes
total time = 40 minutes
serves = 2 members
REQUIRE INGREDIENT DETAILS:
1. Ridge gourd = 500 grams
2. dry red chillies = 4 numbers
3. garlic whole = 1 number ( small size )
4. oil = 1 spoon ( oil spoon as shown in video )
5. mustard seeds = little bit
6. cumin seeds = little bit
7. curry leaves = 2 stems
8. salt = as per your taste
9. turmeric powder = 1/4 tea spoon
PREPARATIONS:
1. chopped ridge gourd
2. peel off garlic and chopped it
3. add little bit salt to chopped ridge gourd and squeeze it slightly for half minute. After that, close the lid and soak for 10 minutes
4. After 10 minutes, squeeze the water completely in ridge gourd. This is traditional recipe. In olden days, our elders follow like this
5. After squeezing water in ridge gourd by hand, then keep aside
COOKING PROCEDURE:
1. switch on the stove with high flame and pour oil
2. After oil gets heated up, add mustard seeds
3. after splutter mustard seeds, turn the flame in sim mode
4. now add cumin seeds
5. After that, add garlic pods.
6. After slightly fry the garlic pods, now add chopped dry red chillies
7. After dry red chillies slightly fry, now add squeezed out ridge gourd pieces
8. mix well and add little bit turmeric powder
9. stir it occasionally
10. After some time, check the taste, and add salt if require
11. as squeezing, ridge gourd sauted quickly
12. switch off the stove whenever ridge gourd sauted well
13. no need coriander leaves, cumin powder, coriander powder, tomato, ginger garlic paste and water for this fry
14. As you squeezing the water in ridge gourd, fry would be more tasty. if you don’t squeeze, then fry may not have much tasty
