"Nimki Recipe"
Ingredients:
• Maida (All-purpose flour): 2 cups
• Kalonji (Kali Jira): 1 teaspoon
• Sugar (Chini): 1 teaspoon (optional, for light sweetness)
• Baking powder: 1/4 teaspoon
• Salt: 1/2 teaspoon
• Water: As needed to knead the dough
• Oil (for frying): As needed
• Ghee or oil (for mixing in dough): 2 tablespoons
• Instructions:
Step 1: Prepare the Dough
1. In a large bowl, mix maida, salt, baking powder, and kalonji.
2. Add ghee or oil to the flour mixture. Rub it between your fingers until the mixture resembles breadcrumbs.
3. Add water gradually and knead into a stiff dough. It should not be too soft, as a stiff dough ensures crispy nimkis.
4. Cover the dough with a damp cloth and let it rest for 20-30 minutes.
Step 2: Shape the Nimkis
1. After resting, divide the dough into small portions and roll them into balls.
2. Roll each ball into a thin circle using a rolling pin (like making a chapati).
3. Cut the circle into desired shapes, such as diamonds or strips, using a knife or cutter. You can also fold and shape them into triangles or rectangles if preferred.
Step 3: Fry the Nimkis
1. Heat oil in a deep frying pan over medium heat. To check if the oil is ready, drop a small piece of dough into it-if it rises slowly and steadily, the oil is perfect for frying.
2. Fry the nimkis in batches, ensuring they do not overcrowd the pan.
3. Stir gently and fry until they are golden brown and crisp. This process should take 5-7 minutes per batch.
4. Remove the fried nimkis using a slotted spoon and place them on a plate lined with paper towels to drain excess oil

Storage: Once completely cool, store the nimkis in an airtight container. They stay crispy for up to 2 weeks.
