Marzipan is a confection made of ground almonds and sugar, and often scented with rose water or almond extract. Marzipan is a base for many holiday recipes and uses only five ingredients. It can be rolled into a log shape, sliced and eaten or used to make marzipan cookies or for cake decorating. This homemade recipe beats any store bought marzipan hands down! Not only is this tastier, it is so much cheaper to make at home.
INGREDIENTS
2 cups (200g) blanched almond flour
1 ½ cups (180g) powdered sugar
¼ teaspoon almond extract
¾ tablespoon rose water
1-2 tablespoons water
DIRECTIONS:
1. Into a food processor, add in almond flour, sugar, almond extract, rose water and a tablespoon of water.
2. Blitz the ingredients for 10-20 seconds.
3. Check the consistency.
4. If the mix is still quite dry and doesn’t hold together, add a further tablespoon of water and blend until a thick dough like consistency is formed.
5. Transfer the marzipan dough onto a clean, flat surface. Knead for around half a minute, shape it into a log.
6. Wrap in plastic film and store in a cool place.
