LOTUS BISCOFF MINI CHEESECAKES (makes 9 mini cheesecakes):
150g (19 pieces) Lotus Biscoff biscuits
200g (1 cup) soft cheese (cream cheese)
1 very heaping tbsp (approx 150g) Lotus Biscoff spread (If not available then substitute with 50g (7 pieces) finely crushed Lotus Biscoff biscuits)
200ml (3/4 cup + 2 tbsp) heavy whipping cream (double cream)
1 tsp vanilla extract
5 Lotus biscuits for decoration
OREO MINI CHEESECAKES (makes 12)
240g / 22 pieces Oreo biscuits
60g unsalted butter
400g (1+3/4 cups) cream cheese
400g (1+ 2/3 cups) double cream (heavy cream)
2 tbsp sugar
1 tsp vanilla extract
250ml (1 cup) whipping cream
1+1/2 tbsp sugar
1 tsp Vanilla extract
12 mini Oreos or Oreo halves for decoration
Store in the fridge for up to 3 dyas.
