Patatas rellenas de champiñones al ajillo.
Ingredientes:
4 patatas. 300 g de champiñones (baby). 2 dientes de ajo. 125 g de queso mozzarella rallado. 100 ml de vino blanco. Aceite de oliva virgen extra. Perejil. Sal.
Preparación:
Calienta abundante agua en una cazuela grande. Lava las patatas, introdúcelas en la cazuela, sazona, tapa y cuécelas durante 35-40 minutos. Retira, escúrrelas y espera a que se templen. Pon agua en un bol grande, añade los champiñones y remuévelos para eliminar cualquier resto de tierra que puedan tener. Retira, sécalos, córtalos por la mitad y resérvalos. Calienta una sartén grande con 3 cucharadas de aceite. Pela los dientes de ajo, córtalos en daditos y añádelos a la sartén. Tenlo de 2 a 3 minutos y ponemos los champiñones que teníamos reservados. Sazona y saltéalos durante 3-4 minutos. Vierte el vino y cocínalos durante 6-8 minutos. Corta las patatas por la mitad y con un sacabolas, vacíalas a un bol, teniendo cuidado de no romperles la piel. Reserva también las cáscaras. Sazona la pulpa de las patatas, agrega un poco de perejil picado y májalas. Incorpora el puré de patata a la sartén donde están los champiñones y mezcla bien. Rellena las patatas, colócalas sobre una bandeja de horno y cúbrelas con queso rallado. Gratínalas en el horno (calor de arriba) hasta que se calienten y se funda el queso.

Potatoes stuffed with garlic mushrooms.
Ingredients:
4 potatoes. 300 g of mushrooms (baby). 2 cloves of garlic. 125 g of grated mozzarella cheese. 100 ml of white wine. Extra virgin olive oil. Parsley. Salt.
Preparation:
Heat plenty of water in a large saucepan. Wash the potatoes, put them in the casserole, season, cover and cook for 35-40 minutes. Remove, drain and wait for them to cool. Put water in a large bowl, add the mushrooms and stir them to remove any dirt they may have. Remove, dry, cut in half and set aside. Heat a large skillet with 3 tablespoons of oil. Peel the garlic cloves, cut them into small cubes and add them to the pan. Leave it for 2 to 3 minutes and add the mushrooms that we had reserved. Season and sauté for 3-4 minutes. Pour in the wine and cook for 6-8 minutes. Cut the potatoes in half and, using a baller, empty them into a bowl, being careful not to break the skin. Also reserve the peels. Season the pulp of the potatoes, add a little chopped parsley and mash them. Add the mashed potatoes to the pan where the mushrooms are and mix well. Stuff the potatoes, place them on a baking tray and cover them with grated cheese. Gratin them in the oven (heat from above) until they are hot and the cheese melts.
