Chicken feet are a delicacy cooked and eaten in many countries. They don't contain much meat, but being comprised of mostly skin, cartilage, tendons, and bones, they’re abundant in collagen proteins, which may help relieve joint pain, grow stronger nails, aid skin health, and prevent bone loss.
Although chicken feet are often deep-fried, preparing them with vegetables and herbs is a healthier way to capture the benefits of chicken feet. Be aware of very small bones, which may pose a choking hazard.
We prepared chicken feet with a slow simmer overnight, and a separate concoction using an Instant Pot to pressure cook them for 90 minutes. They both were quite flavorful, although they looked completely different. Here's what happened.
Ingredients:
10 to 20 chicken feet, cleaned, peeled, declawed (optional) and prepped for broth
enough filtered water to cover
1/4 cup apple cider vinegar (optional)
salt, pepper, carrots, celery, onion, other spices to taste
Instructions:
Place the chicken feet into the stainless steel insert of your Instant Pot.
Add water to cover the chicken feet along with the apple cider vinegar.
Add vegetables and herbs and spices.
Place the lid on the Instant Pot, seal the vent.
Adjust the time to 90 minutes on high pressure.
Allow pressure to naturally release.
Strain the broth, refrigerate when cooled, and freeze or store in glass containers.
