I've been making great fresh milled italian bread for a while now, and I made it with all spelt before, but it required vital wheat gluten in order to be even somewhat workable. I wasn't that pleased!
But this dough, changes everything. It doesn't have vital wheat gluten in it (although you can choose to add a little if you prefer a little extra rise). And it's fabulous! Nice, big holes, even with excessive dough handling.
