Didn't think you could make hard cheeses with goat's milk? Think again! We have been making this delicious Colby Cheese for over a year now and it is a family favorite. The original recipe is from The New England Cheesemaking Company and you CAN make this and many other cheeses with pasteurized cow's milk from the store.
(sometimes pasteurized milk requires the addition of calcium chloride so read the recipe carefully)
