Recipe :
Onion Pickle
Preparation Time: 15 minutes
Serves: 3-4
Ingredients:
3 large onions
2 tsp Kashmiri red chilli powder
1 tsp red chilli powder
1 tbsp salt
1 tsp turmeric powder
3 tbsp mustard oil
½ tsp nigella seeds
1 tsp fennel seeds
1 tsp mustard seeds
¼ tsp Hing
3 tbsp white vinegar
2 green chilies
Method:
Slice the onions. Add 1 tsp salt and set aside to sweat for 10 minutes.
Drain out the water released.
Mix the turmeric powder, red chili powder, salt, slit green chilies and vinegar.
Heat the mustard oil in a pan. add the mustard seeds, fennel seeds, nigella seeds, hing and allow to splutter.
Add the tempering to the onions and mix well. Store refrigerated for over a month.
Pyaz ki Sabji
Preparation time: 10 minutes
Cooking time: 15 minutes
Serves: 3-4
Ingredients:
15 small onions
1 tsp turmeric
1 tsp chilli powder
1 tsp salt
For curry:
3 tbsp oil
1 tsp mustard seeds
½ tsp cumin seeds
2 dried red chilies
1 pinch hing
few curry leaves
1 cup finely chopped onion
1 tbsp ginger garlic paste
½ tsp turmeric powder
1 tsp chilli powder
1 tsp coriander powder
1 tsp garam masala
Salt to taste
1capsicum, cubed
½ cup tomato puree
½ cup curd, whisked
½ cup water
Chopped coriander leaves
Method:
Slit 15 small onions marking an x in centre.
Mix the salt, turmeric, red chili powder.
Fill the mixture into the cuts in the onions. Rest for 5 minutes.
Heat 2 tbsp oil, add the onions and saute till slightly softened and pink.
Remove the onions and add the mustard, cumin, pinch hing and few curry leaves.
Add chopped onion. Saute well until onions turn golden . Add turmeric powder, coriander powder, red chili powder, salt to taste followed by the ginger garlic paste.
Add tomato puree and cook well. Cook until the oil separates.
add ½ cup water, curd, capsicum and bring to a boil.
Add in the onions and give a good mix.
Cover and simmer for 4-5 minutes or until the onions softens and absorbs masala.
Finally, sprinkle the garam masala and cover and rest for 3-4 minutes.
Serve garnished with garam masala.
Onion Rings
Preparation time: 20 minutes
Cooking Time: 4-5 minutes
Serves: 3-4
Ingredients:
3 Large onions
4 tbsp flour
2 tbsp corn flour
1 tsp mixed herbs
1 tsp chilli flakes
1 tsp salt
Cold water as required
1 cup corn flakes crumb
oil for frying
Method:
Peel the onions and cut into ½” thick rings.
Separate the rings and soak in ice cold water for 10 minutes.
Mix the flour, corn flour, herbs, chilli flakes and salt.
Prepare a smooth lump free batter adding cold water as required.
Drain the onion rings. Coat in flour and then dip the onion ring in flour paste and coat well.
Roll the coated rings in corn flakes crumbs and coat well.
Fry until the onion rings turn golden brown and crisp.
Serve hot.
