There is a difference between beef bone stock and beef bone broth. A few years ago, the popular paleo diet began referring to beef stock as Beef Bone broth or just bone broth. The difference is a beef bone stock is very thick due to the collagen being slow cooked / rendered from the bones by cooking for days at a low temperature. Beef broth is traditionally a thinner consistency made in a matter of a few hours. Both have essentially the same ingredients, but differ in the cooking time and viscosity.

Hillbilly Jilly Beef Bone Broth
Ingredients
Makes 3 to 4 quarts
● 3-4 pounds beef bones with marrow
● 1 bay leaf
● 1/2 cup raw unfiltered apple cider vinegar
● 4 carrots chopped
● 4 celery stalks chopped
● 2 medium onions chopped
● Filtered water – enough to cover
Directions
1. Roast bones at 425 degrees for 30 minutes
2. Add bone to crock pot or large stock pot
3. Add bay leaf, apple cider vinegar and enough water to cover
4. Cover and simmer on low for 42 hours
5. About the last 6 hours, add carrots, onion and celery. Cover and simmer 6 more hours
6. Strain bones and veggies with a cheese cloth in large bowl.
7. Refrigerate beef broth for 24hours
8. Skim off solidified fat and refrigerate, freeze or can broth
Note: Use broth in a variety of recipes: beef stews, soups, spaghetti sauce etc., or heat and drink.
