Poke Bowls 🥗🍣🍚
These poke bowls are one of my favorite meal prep recipes of all time! They are relatively cheap and easy to make, they are healthy and filling, and the flavors are refreshing and crisp. This is a perfect meal prep recipe for the summer, and you can customize them any way you’d like. I feel the sauce and garnish bring it together perfectly. Servings: 6
Ingredients:
-4 cups of cooked white rice
-1 cup choice of protein (extra firm tofu, fresh or smoked fish, etc.)
-1 cup of cooked edamame
-1/2 of a medium red onion, thinly sliced
-1/2 of a large cucumber, quartered and sliced
-1 bell pepper, cut into thick strips and then sliced across into smaller chunks
-1/2 cup of carrot, julienne cut (or pre-shredded)
-3-4 fresh radishes, thinly sliced
-1/4 head of fresh red cabbage, thinly sliced
-1/4 cup of pickled red cabbage (optional)
-1 large avocado, thinly sliced
-other optional toppings (mango, jalapeño, etc.)
-fresh green onion for garnish
-toasted sesame seed for garnish
Sauce:
-1/3 cup of mayo
-4 tbs of soy sauce
-3 tbs of sriracha
-2 tsp of sesame oil
-1 tsp minced garlic or garlic paste
-1 tsp minced ginger or ginger paste
Instructions:
-cook rice and prepare tofu as directed
-prepare individual fresh ingredients from above and set aside
-add sauce ingredient into a small bowl and mix well
-begin building bowls with a layer of rice at the bottom
-add desired ingredients and top with sauce and garnish
