Who doesn't love dosa?
Dosa is a complete meal, you can have it in the morning as breakfast or have it as lunch, the dish is simple yet the flavours are so layered. I have made this easy coconut dosa with tomato chutney.
There are many different ways to make this dosa, i find this recipe to be the easiest .
This tomato chutney is my recipe and it sure takes this humble dosa to a whole new level.

Full Recipe:
Rice- 2 cups
Methi- 1tbsp (I have already mixed methi seeds in rice)
Wash 3-4 times
Now add water
Cover and soak for 5 hours
Find ways to kill time
Transfer soaked rice to a blender
Blend it to a smooth paste
Rice batter is ready
Add freshly grated coconut- 1 cup
Poha/flat rice - 1 cup
Water- 1 cup
Blend
Coconut batter is ready
Mix well
Cover and let this ferment overnight
Next morning
Add salt: 1 tbsp
In a non stick pan/ cast iron pan make dosas
Add some ghee
Cook till it turns light brown
Dosa is ready
Chutney recipe:
Onion- 1/2
Tomato- 2 medium size
Green Chilli- 1
Dry Red Chilli- 2
Sugar: 1 tbs
Salt: 1tsp
Tamarind pulp soaked in hot water for 1 hour, cleaned and blended in a jar- 2 tbsp
Cook for 4-5 minutes
After it cools down, transfer to a blender
Blend
Tempering
Oil ( coconut or any vegetable oil) 1/2 tsp
Black mustard seeds: 1 tsp
Curry leaves
Add it to the chutney
Enjoy the super soft dosas with hot and tangy chutney
