INGREDIENTS:
Chopped red Amaranth leaves and stem- 3cups
Oil-2Tbsp
Mustard seeds-1/2tsp
Urad dal-1tsp
Salt
Curry leaves
Dry red chillies-2
Shredded coconut-handful
Shallots-4
DIRECTIONS:
1. Add oil to the pan, add mustard seeds allow itto crackle
2. Add the urad dal, shallots, dry red chilies and curry leaves
3. Once shallots are translucent add the red Amaranth leaves
4. Saute for 5-7 mins, add the salt, grated coconut saute till mixed
5. Turn off flame, serve andenjoy
Accompaniments: Rice, papad, ghee, dal
