Mallorca has lots of traditions, but one of my favourites is the one celebrated on the 17th January, Sant Antoni. The festival commemorates the fight vs a saint, protector of the animals, Antoni and the Devil. To recreate the battle they do a fire festival where people, dressed as demons and with all sorts of fireworks, dance with the people in a big party of smoke, fire and music. Definitely something to experiene!
