Ingredients for Fish Curry:
Sankara Fish – 500gm
1. For Masala paste :
Shallots 10
Garlic 10 pods
Coconut ¼ cup
Curry leaves few
Cumin seeds 1.5 tbsp
Pepper 1.5 tbsp
Shallow fry the ingredients in the above order : Pepper, cumin seeds, curry leaves, garlic, shallots and transfer it in to a plate. Once the mixture cools, grind into paste.
2.For Gravy :
Shallots 10 to 12
Tomatoes 3
Masala powder 3.5 tbsp (Kulambu Podi, Kulambu Masala)
Coriander leaves few
Tamarind as per taste
Mustard seed 1tsp
Urad dal 1 tsp
Garlic pods
Curry leaves few
Salt to taste
Turmeric powder ½ tsp
Fenugreek ½ tsp
Heat oil in a wide pan, add mustard seeds, urad dal, curry leaves and once the curry leaves platter, add garlic pods, give it a quick mix and then add shallots and salt as per taste. Lets the shallots turn golden brown, add tomatoes and close the pan. Once the tomatoes become mushy, add the turmeric powder and masala powder. Once the raw smell of the powder goes off, add water and boil it. Then add thick tamarind paste. Let it cook for few minutes. Then add the ground masala paste and allow the gravy to cook for few mins. Star ingredient Fish is ready to be added to the gravy now. Add the fish pieces one by one. Let it cook for 3 mins in high flame and 1 min in medium flame. Tasty fish curry / Kulambu / Gravy / Kolambu is ready to be served.
