These carrot cake waffles turned out amazing! Light, fluffy and I love the strong vanilla flavor that comes through, not only in @flavcity Vanilla Cream protein smoothie, but also the one tablespoon of vanilla bean paste we added to this recipe.
If you are on WW, each waffle is 5 points. If you count calories or macros, each waffle is 151 calories, 2.4 fat, 25 carbs, 1.4 fiber and 6.7 protein.
Makes 5 Waffles
1 cup flour
1/4 cup Splenda (or any no calorie sweetener)
2 teaspoons baking powder
1 teaspoon cinnamon
1 scoop (42 grams) @flavcity Vanilla Cream protein smoothie
1 cup unsweetened almond milk
1 large egg
1/2 cup shredded carrots (I'd add more next time!)
1 tablespoon vanilla bean paste
In a large bowl, add the protein powder and almond milk together until combined. Add remaining ingredients and stir just until combined.
If you can, let the batter sit for 30 minutes to let the baking powder do its magic. Heat the waffle maker according to manufacturer instructions.
Using 1/2 cup measure, pour batter into waffle maker. Cook for 4-5 minutes.
Serve with syrup of choice, a pat of butter (duh!), blueberries and chicken sausage to complete the meal.
One waffle was plenty for me, so my plate was 9 WW points. Filling and delicious!
