Eggplant Okra and Potatoes // Baingan Bhindi Aloo - My Family's Favourite Vegetarian Dish!

In this video, we show you how to make a fantastic dish with Eggplant, Okra and Potatoes which we call Baingan Bhindi Aloo. Now this dish is my family's favourite ever vegetarian dish, and we have it almost every single week! There is a specific way to cook okra (bhindi) and eggplants (also known as baingan, aubergine or brinjal) otherwise when cooked wrong they become slimy and not appetising at all. But when cooked correctly, okra and eggplants taste absolutely delicious in combination with potatoes (aloo). You can serve this baingan, bhindi Aloo with tandoori roti, chapati or even rice if you wish. We love having this eggplant and okra dish with buttery roti and some fresh salad.

To make the Eggplant, Okra and Potato curry recipe, you will need:
2 x medium potatoes
frozen or fresh okra (bhindi) about a bowl worth
1 x large eggplant (baingan)
1 x large onion
green/red chilies to taste (we used 4 since these chilies were not too spicy)
oil for frying
1 tsp salt (or to taste)
1/2 tsp turmeric
1 tsp Kashmiri chili powder
1/2 tsp cumin powder
3 tbs grated or tinned chopped tomatoes
1 tsp whole coriander seeds
1 tsp whole cumin seeds
1/2 tsp fennel seeds
1/2 tsp mustard seeds
1/4 tsp nigella seeds
1/4 tsp carom seeds
2 cloves
1 tsp curry leaves
1/2 tsp sugar
lemon juice to taste
fresh coriander for garnish
