When I want Mangsho Luchi on my thala
Mutton Khara Masala
INGREDIENTS :
Boneless mutton or lamb, 1/2 kg, cubed
Onions - 3, medium, sliced
Garlic - 1 heaped tbsp, sliced
Ginger - 1 heaped tbsp, shredded
Dry red chillies - 2 to 4, as per taste
Cardamom - 3
Cloves - 3
Cinnamon - 2 sticks
Black peppercorns - 8
Green chillies - 1 or 2, as per taste
Salt - to taste
Oil - any white oil ( i use a heart healthy olive oil ) 2-4 tbsp
Cilantro - 2 heaped tbsp
In a pressure cooker heat up the oil
Fry the onions till lightly brown
Half the chilli garlic ginger, all the spices,
Then the mutton, stir round and round
Add water, and pressurise
10minutes on high, 10 on low,
Add remaining chilli garlic ginger
Then green chilli, and cilantro
Now check, if taste is okay
It will taste even better next day
This easy khara masala mutton
Is guaranteed to blow you away!
