Mutton Rasam is the flavorful south Indian Soup made with mutton stock, fine spices and Tamarind juice.

Ingredients:
Mutton - 400 gms
Rice rinsed water - required amount
Turmeric powder - 1/2 Tsp
Fennel Powder - 1 Tsp
Ginger-garlic Paste - 1 tsp
Sesame oil - 3 Tsp
Mustard seeds - 1/4 Tsp
Dry chilli - 2
Tomatoes - 2
Garlic - 3 Pods
Jeera - 1/2 Tsp
Peppercorns - 1/2 Tsp
Curry leaves - 2 Spring
Coriander leaves - a few
Tamarind Juice - 1 Tblspn
Procedure:
* Add 1 Tsp of sesame oil to a pressure pan and add Mutton, Turmeric Powder, Fennel Powder, Gingergarlic paste
* Saute well until, mutton leaves water
* Add rice rinsed water/plain water until meat get immersed
* Pressure cook the meat in high flame for 1 whistle
* Lower the flame and cook for 20 mins.
* Extract the stock from cooked meat.
* In a mixer jar, add 2 tomatoes, garlic, jeera & Peppercorns.
* Grind to a course paste
* In a sauce pan, add 2 Tsp of oil
* Add 1/4 Tsp of mustard seeds and let it crackle
* Add dry chillies & curry leaves
* Add ground rasam masala.
* Saute well until raw smell leaves and mixture turns aromatic.
* Add Turmeric powder & Salt to taste
* Add Mutton stock, leftover rice rinsed water.
* Add water to desired consistency
* Let it boil
* Add coriander leaves and cover the pan with lid to avoid flavor to escape.
* Enjoy this flavorful mutton Rasam with Hot Rice & Mutton Chukka..
