Cajun dirty rice is cooked with your choice of ground meat or you could get really serious by using liver or kidney! I went with Italian sausage since it’s something we can all agree on in our house. This is the first time I’ve made dirty rice and both the hubby and I were surprised at it’s awesomeness. This may become a regular in my weekly meal prep – it’s also a great way to use up some scraps from the fridge.
BONUS: Leftovers make a great fried rice for breakfast the next day. Just scramble and cook 3 eggs in a hot pan with butter until they’re still a little wet and move them to a bowl. Add about 3 cups of leftover dirty rice to the pan and cook until it’s all heated through and you get a few crispy bits of rice happening. Add the eggs back to the pan and stir it all around for another minute or so. Delicious! My husband said the flavor reminded him of loco moco that he used to get in Hawaii – the only thing missing was the gravy!

Today’s Ingredients:
8 oz Italian sausage (using sweet Italian in the video)
1 onion, finely chopped
1 green bell pepper, finely chopped
3 celery ribs, finely chopped
3 garlic cloves, minced
½ TB salt
¼ tsp black pepper
¼ tsp ground cayenne pepper
1½ cups chicken stock
1½ cups long grain rice, rinsed
½ cup chopped fresh parsley
Instructions:
1. Heat the Instant Pot on saute mode and add the Italian sausage when the display reads “HOT.” Cook the sausage until fully no longer pink.
2. Add the onions, bell pepper, and celery. Stir and cook for a few minutes until the veggies are just softened.
3. Add the garlic, salt, black pepper, and cayenne and stir for another minute.
4. Add the chicken stock and stir to deglaze the bottom. Make sure you scrape up any stuck on bits from the bottom of the pot.
5. Spread the rinsed rice evenly over the top and press down into the liquid without stirring up the base.
6. Lock the lid and cook on manual/high for 5 minutes followed by a 10-minute natural pressure release. Release any remaining pressure before reopening the lid.
7. Stir in the chopped parsley.
8. Serve and ENJOY!!!
