Making homemade seitan is easy to do at home and there are many natural colors and flavors that can be added to make the loaf turn out special. This stuffed seitan roast is definitely non-traditional in color, but the fall flavors can't be mistaken. Don't let the "aubergine" color throw you off. The purple hues of this roast would pair perfectly with the orange color of candied yams or a green bean casserole.
The wild rice and mushroom stuffing with cranberries and green apple can be made as a stand alone side dish, if you don't want to stuff the seitan. This rice was excellent! it tasted like Thanksgiving on a plate!
