Elle Vernon cooks a Thai massaman curry in the Philips All-in-One Multicooker.
MASSAMAN BEEF AND POTATO CURRY
preparation time: 10 mins
cooking time: 1 hour (excluding pressure building and release)
Serves 6
1.2kg beef chuck steak, cut into 2-3cm dice
1 red onion, finely diced
2 cloves garlic, thinly sliced
114g can Massaman curry paste (about ½ cup)
500g chat potatoes, halved or quartered
1-2 star anise
1 cinnamon stick
400ml coconut cream
250ml (1 cup) vegetable stock
Steamed rice, coriander, finely sliced red chilli and chopped roasted peanuts, to serve
STEP 1 Insert non-stick inner pot into the Philips All-In-One multi cooker and turn on at the power point. Select Sauté/sear. Select temp to increase to high. Select Cooking time. Press the ‘+’ button to increase time to 12 minutes. Select Start.
STEP 2 When hot, add half the beef and cook stirring occasionally for 5 minutes until browned. Set browned beef aside on a plate and repeat with remaining beef.
STEP 3 Add onion and garlic to pan along with Massaman paste, then stir until cooking time is complete. Return cooked beef to the inner pot and stir until well coated.
STEP 4 Add potatoes, star anise and cinnamon, then stir in coconut cream and stock.
STEP 5 Place lid on the cooker and close, Set valve on the lid to seal.
STEP 6 Select Pressure Cook. Select Beef/lamb. Select Cooking Time. Press the ‘+’ button to increase time to 45 minutes. Select Start.
STEP 7 When cooking time is complete, allow to stand for 15 minutes with lid on. Manually release the pressure, turning valve on the lid to vent, intermittently to allow pressure to slowly release. Alternatively, set the pot aside for slightly longer to allow pressure to naturally release.
STEP 8 Use a slotted spoon to remove beef and potatoes. Set aside. Select Sauce thickening. Press the ‘+’ button to increase time to 10 minutes. Select Start. Stir sauce occasionally. Once cooking time has completed, return potatoes and beef to sauce, stir.
STEP 9 Serve with steamed rice, coriander, finely sliced red chilli and chopped roasted peanuts.
COOKS NOTE: When cooking using the sauté/sear function, ensure the lid is off.
