Football's back and it's time for over-the-top chili on our Weber Searwood! We smoked the ground beef and pork over the pot of chili to catch the juices in the mix and added one more special ingredient at the very end to beef up the flavor. The result was heaven in a bowl! ✅ Old Dominion Chili Ingredients:
2.5 lb 80/20 ground beef
1 lb breakfast sausage
1 large white onion, chopped
1 green pepper, chopped
1 red pepper, chopped
1 hatch chili pepper, chopped
4 jalapeno peppers, chopped
1 large can of petite diced tomatoes, strained
1 large can of tomato puree
1 can each of pinto, kidney, and black beans, strained
1.5 boxes of Carrol Shelby's chili seasoning (or your favorite seasoning)
Half a large container of beef stock
1 can of beer
✅ Old Dominion Chili Instructions
1. Mix the onion, peppers, tomatoes, puree, beans, seasoning, stock, and beer in a large dutch oven or pot.
2. Place on smoker or grill at 275 degrees.
3. With your hands, mix the ground beef and pork sausage, form a large meatball.
4. Season the outside of the meatball with Holy Cow rub or your favorite BBQ seasoning.
5. Put a cooling rack or other rack on top of the dutch oven on the smoker and place your meatball on it.
6. Smoke for one hour, then increase the smoker/grill temp to 325.
7. Check the meatball temp. Once it reaches 130 degrees, raise the smoker/grill temp to 375.
8. When the meatball reaches 165 degrees, break it up into small pieces and add it to the chili in the dutch oven.
9. Add the special ingredient (watch the video to see what it is).
10. Let simmer for another 30 minutes.
11. Serve in bowls with cheese, sour cream, chives, and sliced jalapenos. ENJOY!
