Vegan Pupusas
If you've never had pupusas, you are in for a treat! I fell in love with them years ago, & since becoming vegan, I was only able to find vegan pupusas on a food truck an hour away 😮💨 so I had to make them!
They are a labor of love, so this is only my 2nd time making them lol & this time I made extra & froze them 🤗
I got this recipe from @viewsontheroad on YouTube & made it vegan! Most of the recipe is made the traditional way, but of course, I had to add a few extras 😉
🌱Curtido(cabbage slaw or relish)🌱
1 bag of cabbage slaw 🥬🥕(or shred your own cabbage & carrots)
1 cup Apple cider Vinegar
1cup water 💧
1 Tablespoon Oregano
1.5 Tablespoons Salt 🧂
1 teaspoon black pepper(optional)
1 Jalapeño(optional)
Mix everything together & refrigerate for at least 3 hours (overnight is best)
🌱Filling🌱
•I used soy curls, but you can use beans, jackfruit, mushrooms, veggies, or just cheese! Use whatever you like!
•For my soy curls, I seasoned with vegan worcestershire sauce, garlic powder, onion powder, smoked paprika, mushroom powder, vegan chicken bouillon & salt & pepper to taste.
•I cooked it & pulsed it in a blender(or you can chop it by hand).
•In A blender add 1 Roma Tomato, 1/4 onion, 1/8 green pepper (I didn't have any), 1 clove of garlic, 1-2 teaspoons vegan chicken bouillon powder, 1/4 teaspoon cumin. Blend. Taste & adjust as needed.
•once blended, add to filling, mix well & add vegan shredded mozzarella.
🌱Salsa Roja🌱
3 Roma Tomatoes
1/4 onion
1 Jalapeño
1 teaspoon cumin
2 teaspoons garlic powder
1 teaspoon mushroom powder(optional)
Salt & pepper to taste
Blend well & taste & adjust as needed. Over medium heat, add a teaspoon or so of oil to your pan & cook down salsa for a couple of minutes. Remove from heat & allow to cool.
🌱Dough🌱
2 cups Masa harina(Maseca)
1.5 cups water(adjust as needed)
1/2 teaspoon Salt
•In a bowl, combine masa and salt. Gradually add water while mixing until the dough is smooth, but not sticky. Cover dough with a damp cloth to keep it from drying out while you prepare the fillings.
•Divide the dough into small balls (about the size of a golf ball).
Flatten one ball in your hand to create a thick disc, about 4 inches in diameter. Place about 1–2 tablespoons of filling in the center.
Carefully fold edges of the dough over the filling and pinch to seal it.
Flatten the filled ball gently into a round disc, being careful not to let the filling break through.
•Heat a griddle or non-stick skillet over medium heat.
Place the pupusas on the hot griddle and cook for 2–3 minutes on each side, or until golden brown spots appear and they are slightly crispy.
