Baked Beans
-1lbs navy beans (soaked over night in cold water and 1-2tbsp of salt). Drain and rinse very well with cold water prior to use.
-Small-medium diced onion (I use red)
-2-3 minced garlic gloves
-1lbs thick sliced bacon (cut in pieces)
-1/4c molasses
-1/4c maple syrup
-1tbsp soy sauce
-1 & 3/4 cup cold water
-Salt
-Pepper
-2tsp dijon mustard
-1tsp apple cider vinegar
1. Crisp bacon on sauté mode, remove excess fat if you choose.
2. While bacon is cooking mix together the molasses, maple syrup, soy sauce, and water.
3. Add onion and sauté with bacon for 2-3 mins.
4. Add garlic, cook 30-60 secs more.
5. Add some of molasses mixture to pot and deglaze the bottom, scrapping up all the tasty bits.
6. Add remainder of mixture and the beans. Salt and pepper can be added also.
7. Turn off sauté. Place and lock lid. Set to manual or pressure cook for 20mins. Allow for a 20mins natural pressure release.
8. Remove lid when pin drops. Turn on sauté, add mustard and vinegar, allowing to simmer until thickens to preference.
