Roast Lamb Ribs
Serves 4 people
Cooking time:
90 minutes in an oven pre-heated to 170°C,
Ingredients:
1 kg lamb ribs,
2 small onions,
2 small carrots,
For the marinade:
2 tablespoons of yogurt,
3 tablespoons of sunflower oil,
2 cloves of grated garlic,
1 grated medium onion,
1 tablespoon tomato puree or paste,
1 teaspoon ground black pepper,
1 teaspoon sweet paprika,
1 teaspoon of salt.
Tips for the perfect dish: To improve the flavour, leave the ribs marinating in the refrigerator overnight before cooking.
Preparation:
To prepare the marinade, mix together 2 tablespoons of yogurt, 3 tablespoons of sunflower oil, 1 tablespoon of tomato paste, 1 grated onion, 1 teaspoon ground black pepper, 1 teaspoon sweet paprika and 1 teaspoon of salt.
Place about 1 kilogram of lamb ribs on a chopping board. Use a sharp knife to make cuts in the ribs between the bones.
Slice the 2 small onions into rings and scatter them onto a baking tray. Slice the 2 medium-sized carrots into rings and add to the tray.
Brush the marinade over the ribs until the meat is completely covered. Then place the meat on top of the onions and carrots. Bake for 90 minutes in an oven preheated to 170°C and serve piping hot.
