Rose Pasta recipe pasta🍝
Ingredients:
1. 1 red onion
2. 4 garlic cloves
3. 1/2 courgette
4. 200g mushrooms
5. 2 tbsp hummus
6. 300ml passata
7. 1 tbsp tomato purée
8. 300g raw penne pasta
9. 100g red lentils
10. 400ml vegetable stock (add more water as it cooks if needed)
11. 1/2 tsp cayenne chilli pepper (add more if you like spice)
12. Salt & pepper
13. Handful of basil leaves
14. Handful of spinach
15. Fresh Parmesan
Method:
1. Pour 1tbsp olive oil in a pot & add your onion & garlic. Cook for 2 mins.
2. Add the veggies, seasoned salt & cayenne chilli pepper & a splash of water & stir.
3. Add the dry pasta, lentils, passatta, tomato purée, vegetable stock, hummus & stir well on medium heat. Let this cook for 10-12 minutes stirring occasionally.
4. Add salt & pepper to taste, basil leaves, spinach. Stir.
5. Finish with some freshly grated Parmesan!
