🍆Baked Aubergines – Quick & Easy Dinner in 10 Minutes!
This recipe is incredibly simple to prepare and bursting with flavor. Perfect for a quick, healthy, and satisfying dinner!
Ingredients:👇
• 2 large aubergines
• 2 mozzarella balls (sliced)
• 150 ml tomato juice or passata
• 1 tbsp olive oil
• 1/2 tsp turmeric powder
• 1/2 tsp garam masala
• 1/4 tsp cumin powder (optional)
• A pinch of chili powder (optional)
• Salt to taste
Instructions:🔥
1. Prepare the Ingredients:
• Wash the aubergines and slice them.
• Slice the mozzarella into thin, even pieces.
2. Make the Sauce:
• In a bowl, mix the tomato juice or passata with olive oil, turmeric, garam masala, cumin, chili powder (if using), and a pinch of salt. Adjust spices to your taste or add your favorite seasonings.
3. Assemble the Dish:
• Take an oven-safe tray and lightly grease it with olive oil.
• Arrange the aubergine slices on the tray, layering them with the sauce and mozzarella slices. Make sure to evenly distribute the sauce and cheese for every layer.
4. Bake:
• Cover the tray with aluminum foil and bake in a preheated oven at 180°C (350°F) for 30 minutes.
• After 30 minutes, remove the foil and bake for an additional 10 minutes, or until the aubergines are tender and golden brown on top.
5. Serve and Enjoy:
• Serve hot as a standalone dish or pair it with crusty bread, a fresh salad, or your favorite grain for a complete meal.
