I have been loving the Air Fryer! I've been trying different types of filipino meals and here is my latest test recipe- Crispy Pata or Crispy Pork Hock. Pork Hock is part of the pig calf up to the ankle, most traditional crispy pata recipes include the feet. I got this Pork Hock at a local grocery store and it was $5!!!! Instead of serving with some rice I tried a "healthier" version by eating it with lettuce, cucumber and tomatoes with minimal rice. The dipping sauce is also a must.
Recipe:
1 small-medium size pork hock
1/2 onion
2 tsp salt
1 tsp black pepper
1. Pressure cook the pork hock so it is tender (not falling apart). I always blanch my meat for about 10 mins to get rid of impurities and extra blood, this also gets rid of any smelliness. Rinse in cold water and add to pressure cooker.
2. In the pressure cooker- add pork hock, onions, salt, pepper. Pressure cook for 20 mins. If boiling over the stove, boil for about 45mins. Remove from pressure cooker and allow to cool down.
3. Preheat your air fryer at highest heat. Add the pork hock and air fry for 20 mins. Flip halfway to ensure golden brown all around. Spray with cooking oil.
4. Dipping sauce- 1/4 cup soy sauce, 1.5 tbsp vinegar, sliced onions (as much as you want), black pepper. This is great when the onions pickle and goes soo well with the pork.
5. Remove pork hock from air fryer and serve with some lettuce, cucumbers and tomatoes. Or just serve with white rice.
