Ingredients: Chickpea Noodle Soup
1 cup (160 g) onion, chopped
4 cloves garlic, minced
1 tbsp olive oil (or water/broth)
2 cups (256 g) carrots, chopped (2-4 carrots)
1 ½ cups (152 g) celery, chopped (about 4 ribs)
¼ tsp sea salt and black pepper, plus more to taste
8 cups (1.9 l) vegetable broth (homemade or store-bought)
2 cups (480 g) chickpeas, well rinsed and drained
4 sprigs of thyme
1 ½ – 2 cups mafalda corta noodles (130g or ¼- ½ cup rice)
optional: 1 bay leaf
optional: pinch of chilli flakes
