✓ In this video we get to watch the recipe for a traditional Punjabi dish which is cooked in most Punjab homes (and is cooked especially in the winter time) it is also a popular menu item at most roadside Punjabi Dhabas'.
This a another visit to "Chai Naasto" Restaurant kitchen in which Head Chef Vijendra shows us how he makes his restaurant's version of Sarso Ki Sag whilst at the same time revealing some the recipe secrets behind this great dish.
Sarson Ka Saag Recipe Ingredients:
* Desi Ghee or Vegetable oil (Tel).
* Cumin Seeds (Jeera).
* Finely Chopped Garlic paste (Lasan).
* Roughly Chopped Ginger (Adrak).
* Roughly diced White Onion (Dungri).
* Roughly diced Tomato (Tamata).
* Boiled Water (Pani).
* Red Chilli Powder (Lal Mirchu).
* Dry Fenugreek leaves (Kastoori Methi).
* Salt (Namak).
* Butter (Makhan.
* Cream.
* Garnished with Tarka Oil & Juliennes of Ginger.
* Coriander and Cumin Powder (Dhana, Jeera).
* Pre-cooked mixed Leaves consisting of Mustard Leaves (Sarsoo), Radish leaves, Fenugreek leaves and Spinach leaves (all of which are cooked down in a slow cooking method for at least 2 to 3 hours; the longer it cooks, the better it tastes).
Traditionally this dish is served with Makki Di Roti (unleavened Corn flour flatbread) but here we had it with a freshly made Butter Naan bread.
Note that; in Indian restaurants dishes are cooked on a very high heat which delivers a slight smokiness to the cooked food and gives that distinctive restaurant flavour and character to a dish.

The Chai Naasto guys have created a delicious menu drawing inspiration from their Grandmother's (Nanima) classic home cooked food and India's famous street food stalls & laris'. The restaurant menu features some of India's favourite street foods.
There are so many more "Indian Street Eats" items on the menu that we didn't have a chance to try.........so we can't wait to pay a return visit to taste what we have missed this time around, wink wink!!! ;-)
To give you an idea of what we mean, the following are just some of the veggie (and non veg) items featuring on their extensive menu:
* Chandni Chowk Crispy Kale Chaat - Battered kale, roasted sweet potato, pomegranate dressed with yoghurt & tamarind chutney. (This is the menu item featured in this video)
* Podi Idli - Steamed rice cakes sprinkled with “gunpowder” seasoning & served with spicy lentil broth.
* Bombay Ragda Pattice - Spiced potato cakes & yellow pea stew topped off with mint chutney, coriander chutney, tamarind chutney & pickled red onion.
* Bombay Bhel Puri - A Mumbai street food classic. Puffed rice, diced potatoes, diced onions, masala & sev drizzled with an assortment of chutneys.
* Bombay Chilli Cheese Bites - Chilli cheese nuggets crumbed & fried until crispy & drizzled with our homemade chilli sauce.
* Chowk Ki Tikki - Green pea potato cakes with spiced chickpeas & drizzled with a melody of chutneys & sweet yoghurt.
* Chandni Chowk Ke Samose Chaat - Crisp Punjabi vegetable samosas broken & served with spiced chickpeas & drizzled with a melody of chutneys & sweet yoghurt.
* Nizami’s Lamb Samosa Chaat - Crispy Gujarati lamb samosas served with green pea potato cakes & drizzled with a melody of chutneys & sweet yoghurt.
* Chatpata Super Food Salad - Quinoa, freekah, lamb lettuce, beetroot, feta cheese & walnut drizzled in our chaat masala dressing.
