Chili Oil (minyak cabai) merupakan sambal khas yang menjadi bumbu pelengkap wajib masakan di Sichuan China atau daerah Asia Timur. Dengan bahan utamanya adalah cabai kering, biasanya digunakan untuk masakan Asia seperti gorengan, ramen, dimsum, bebek peking, tumis sayuran, dan hampir semua jenis masakan Chinese.
Resep Chili Oil
Bahan:
250 gr minyak goreng
60 gr cabai kering
25 gr bawang putih
25 gr bawang merah
25 gr ebi
1 sdt garam
½ sdt gula
½ sdt penyedap
2 sdm kecap asin
Langkah:
1. Haluskan cabai kering dengan blender / food processor, sisihkan
2. Blender bawang merah, bawang putih dan minyak hingga halus
3. Tambahkan ebi yang sudah direndam, blender sebentar
4. Tumis bumbu halus sampai matang dan wangi, bumbui dengan garam, gula, dan penyedap sebelum air dalam bawang habis
5. Masukan cabai yang sudah dihaluskan, masak hingga minyak berwarna merah
6. Tambahkan kecap asin, masak sebentar
7. Simpan Chili Oil dalam botol kaca yang sudah disterilisasi

Chili oil is a signature condiment in Sichuan, China, Korea, or other East Asian countries. The main ingredient is dried chili. It's typically used for Asian dishes such as ramen, dim-sum, Peking duck, sautéed vegetables and nearly all Chinese-style dishes. It adds fragrance and enhances the flavor of a dish!
Chili Oil Recipe
Ingredients:
250 g cooking oil
60 g dried chili
25 g garlic
25 g shallots
25 g dried shrimp
1 tsp salt
1/2 tsp sugar
1/2 tsp flavor enhancers
2 tbsp soy sauce
Steps:
1. Crush the dried chili with blender / food processor, set aside.
2. Puree the shallots, garlic, and cooking oil until fine.
3. Add the pre-soaked dried shrimp, blend shortly.
4. Sauté the fine mix until cooked and fragrant, season with salt, sugar, and flavor enhancers before the water content in the mix is evaporated.
5. Add crushed chili and cook until the oil turns red.
6. Add soy sauce and let it cook a bit more.
7. Store Chili Oil in a sterilized glass jar.
