Chef Hidekazu Tojo, inventor of the California Roll, moved from Kagoshima to Canada in 1971. In 1988 he opened Tojo’s Restaurant in Vancouver. Chef Tojo praises Canadians as multicultural and open-minded towards new, creative recipes. In 2016 he was recognized by the Government of Japan as a Goodwill Ambassador for Japanese Cuisine.
