菜心炒豬肉:
材料:
菜心1斤 (600克)
梅頭豬肉12兩(450克)
薑10片
處理:
1. 菜心,清水浸2分鐘。
2. 梅頭豬肉,清水洗乾淨,擎乾水,廚紙索乾。
3. 豬肉,切片。
4. 薑,去皮,切片。
5. 豬肉調味:
a. 胡椒粉少許
b. 生抽1茶匙
c. 蠔油1茶匙
d. 油1茶匙
e. 生粉1茶匙
撈勻。
6. 預備芡汁:
a. 胡椒粉少許
b. 生粉半湯匙
c. 糖半湯匙
d. 生抽半湯匙
e. 水300毫升
攪勻。
7. 菜心,清水洗乾淨,擎乾水。
烹調:
1. 中火在鑊中燒熱油2湯匙。
2. 放豬肉,煎1分鐘。
3. 煎了1分鐘,反轉豬肉繼續炒。
4. 加入薑片。
5. 加入菜心。
6. 冚蓋2分鐘,轉中慢火,焗軟菜心。
7. 過了2分鐘,轉大火,炒菜。
8. 炒了1分鐘,加入芡汁,繼續炒。
9. 冚蓋,煮滾。
10. 完成,上碟,可享用。

Ingredients:
Choy sum 1 catty (600g)

Ginger 10 slices
Preparation:
1. Choy sum, soak in tap water for 2 minutes.

c. Sugar 0.5 tbsp
d. Light soya sauce 0.5 tbsp
e. Water 300ml
Mix well.
7. Choy sum, rinse with tap water. Hang dry.
Steps:
1. Heat up oil 2 tbsp at medium flame in wok.
2. Put pork, fry for 1 minute.
3. Have already fried for 1 minute. Flip over the pork, continue frying.
4. Add ginger slices.
5. Add choy sum.
6. Cover up the wok for 2 minutes. Turn to medium~low flame to soften the choy sum.
7. Turn to high flame after 2 minutes. Fry the choy sum.
8. Have already fried the choy sum for a minute, put the sauce, continue frying.
9. Cover up the wok. Wait for boiling up.
10. Complete. Put on plate. Serve.
