Zucchini Ikra is a very popular Russian/Ukrainian dish. It is often served as a spread on a toast, sandwich, or a dip for a cracker. However, it can accompany any holiday table as an appetizer or a side dish for a Russian Shashlik ( shish kebob).
This is a simple recipe, there are others with a whole bunch more of ingredients.
For this IKRA I used
6 lb Zucchini (or summer squash)
1.5 lb onion
1.5 carrot
1-2 spicy pepper of your choose ( I used one poblano pepper)
1 cup tomato puree
1 cup oil
0.5 cup vinegar
10 cloves garlic
1 Table Spoon paprika
2 Table spoons Salt ( may use a little less)
2 Table Spoon sugar
1 ts Black pepper.
