If you can't find something you like amongst 20 varieties of anything, you are probably 20, and looking at different varieties of "jobs I can get without going to grad school". For 20 types of shelled masterpieces, hit Velvet Taco: the latest from the dudes behind Twin Peaks, Whiskey Cake, and Ojos Locos, it's a hyper-focused, neon-tinged diner that uses almost exclusively locally sourced ingredients to create a wild list of "tacos for gringos". Amongst your many, many options:
Fish: Sea bounty runs from cornmeal-fried oysters (Napa fennel radish shred, remoulade, pico, smoked chili butter), to an Ahi poke made with ginger-soy vinaigrette, avo, watermelon radish, sesame, pea tendrils, and pickled Fresno, or when Trent Dilfer gets so inebriated, he throws a pass.
Chicken: You want some buffalo chicken? Or possibly some onion chutney? You got it.
Huevos: Eggies are paired with grilled flank steak (herb goat cheese, potato, and arugula), applewood bacon & cheddar potatoes, or chorizo, a number that also features beans and serrano-ranchero, Cerrano Ranchera being the ranch Pedro bought after being wildly overpaid by Tom Hicks.
Beef: For cow, there's flank steak & porta, ranchero flank w/ epazote & queso fresco, and the "Texas Burger" with applewood bacon, American cheese, onion, Kumatoes, pickle, and velvet sauce, so delicious, you won't feel compelled to scream "F*** that sh*t! Pabst Blue Ribbon!"
Pork: The other white meat comes chili-rubbed with Sriracha aioli, roasted and pulled with pineapple habanera and spiked bbq, and shredded, with a scrambled egg, smoked poblano, and a sauce that could describe the line "I'm Jason, want to see my reconstructed knees?" -- white queso.
They're soft-opening this weekend for dinner only (4p-12a) with expanded hours (possibly up to 24h, depending on how it goes) planned for the near future -- which, if you're 20 and staring at the word "paralegal", is about the most terrifying phrase there is.
