Ingredients
Ladies Finger
Gram Flour - 1/4 Cup
Rice Flour - 1/4 Cup
Corn Flour - 1 Tbsp
Turmeric Powder - 1/4 Tsp
Chilli Powder - 2 Tsp
Coriander Powder - 1 Tsp
Cumin Powder - 1 Tsp
Salt - 1 Tsp
Oil
Cashew Nuts
Peanuts
Green Chilli - 6 Nos
Curry Leaves
Method:
1. Wash the okra and cut them into small pieces. Keep them aside.
2. Take besan/gram flour, rice flour, corn flour, turmeric powder, chilli powder, coriander powder, cumin powder and salt in a bowl.
3. Mix it all well and transfer it the okra pieces.
4. Now mix the okra with the flour mixture to make sure it coats all the pieces evenly.
5. Sprinkle a very little water and mix so that the binding remains intact. Let it sit for 5 mins.
6. Pour oil in a wide pan for shallow frying.
7. Drop in the coated okra pieces gently and fry until they are golden brown on all the sides.
8. Remove them from oil and keep them aside.
9. Now in a small pan, add oil and fry the cashews, groundnuts, green chillies, curry leaves and pounded garlic separately.
10. Now put them all in a bowl. Add salt and chilli powder. Mix well.
11. Transfer the fried condiments and nuts into the fried okra. Give it all a nice toss.
12. Mix until they are all well combined. Crispy and nice Bhindi Fry is ready to be served with hot rice and ghee.
