Kodi Guddu Velluli Karam is a spicy Andhra-style egg curry with garlic flavor. Here's a simple recipe for it:
Ingredients:
For the Curry:
6-8 boiled eggs
2 onions, finely chopped
2 tomatoes, chopped
1/4 cup oil
1 tsp mustard seeds
1 tsp cumin seeds
1/2 tsp fenugreek seeds
10-12 garlic cloves, minced
1-inch piece of ginger, minced
Curry leaves
Salt to taste
For the Spice Blend (Velluli Karam):
10-12 dried red chilies (adjust to your spice preference)
2 tbsp urad dal
2 tbsp chana dal
1 tsp cumin seeds
1 tsp coriander seeds
1/2 tsp fenugreek seeds
10-12 garlic cloves
2 tbsp oil
Instructions:
Start by making the spice blend (Velluli Karam):
Heat 2 tbsp oil in a pan and add dried red chilies, urad dal, chana dal, cumin seeds, coriander seeds, and fenugreek seeds.
Roast them on low heat until they turn golden brown.
Add garlic cloves and continue to roast until they become aromatic.
Allow the mixture to cool, then grind it into a smooth paste using a little water. Set aside.
Boil the eggs, peel them, and make small slits on each egg without cutting them into halves.
Heat 1/4 cup of oil in a pan and add mustard seeds. When they splutter, add cumin seeds, fenugreek seeds, minced garlic, and ginger. Sauté until they turn golden brown.
Add chopped onions and curry leaves. Sauté until the onions turn translucent.
Add chopped tomatoes and cook until they become soft and the oil starts to separate.
Add the spice blend (Velluli Karam) and sauté for a few minutes until the oil separates from the mixture.
Add about 2 cups of water and salt to taste. Let the curry simmer for 10-15 minutes.
Gently add the boiled eggs to the curry and simmer for another 5-7 minutes, allowing the eggs to absorb the flavors of the curry.
Garnish with fresh coriander leaves and serve Kodi Guddu Velluli Karam hot with steamed rice or Indian bread like roti or naan.
