This whipped goat cheese, figs, honey and prosciutto appetizer will knock your socks off!!! I used a gluten-free baguette for the crostini and it was delicious! Who would you share this with?
For the Crostini:
1 large French baguette
2 Tablespoons Zesty Lemon Olive Oil
For the Whipped Goat Cheese:
6-8 oz softened goat cheese
1 cup chopped dried figs
1 Tablespoon water
3-4 Tablespoons Honey
Crushed pistachio nuts
Sliced green onions for garnish
2 strips prosciutto (cooked crispy and crumbled) *optional
Instructions:
1️⃣ Slice the baguette on the diagonal into 1/2 inch slices to make crostini.
2️⃣ Brush each side with Lemon oil.
3️⃣ Cook in a medium skillet for about 2 minutes on each side until golden and toasted. Set aside.
4️⃣ Heat a small skillet on medium heat.
5️⃣ Add the chopped dried figs, water, and one Tablespoon of honey. Simmer until the figs are softened and the water has been absorbed. Set aside.
6️⃣ Using an electric mixer on low speed, whisk/whip the goat cheese until light and fluffy, about 2-3 minutes.
7️⃣ Spread the whipped goat cheese onto a shallow plate.
8️⃣ Top with cooked figs, 2 Tablespoons of honey, crushed nuts, green onions, and prosciutto if using.
9️⃣ Serve with Lemon Crostini.
