This cake is an old love and a long time favorite. It is called Verdens Beste Kake- In Norwegian which literally in english means the World's Best Cake..........and it is. I believe it originates from The West Coast of Norway and it is heavenly.
Bunn:
150 gram mykt meierismør
100 gram sukker
5 eggeplommer
150 gram mel
2 ts bakepulver
1 dl helmelk
Marengs:
5 eggehviter
150 gram sukker
150 gram mandelflak
Vanilla Cream:
3 dl melk
1 vaniljestang
3 eggeplommer
100 gram sukker
2 ss Maizena
2 dl kremfløte
Bunn
Pisk smør og sukker hvitt.
Tilsett eggeplommer – en og en – mens maskinen går.
Bland sammen hvetemel, bakepulver og melk i eggeblandingen, og bland til røre.
Ha røren i form kledd med bakepapir.
Pisk eggehviter stive, til marengs. Tilsett sukker litt og litt.
Ha marengs over kakebunnen. Strø over mandelflak.
Stek på 180 grader, i ca. 25-30 minutter, midt i ovnen. Sett til avkjøling.
Vaniljekrem
Kok opp melk sammen med frøene fra vaniljestang, og pisk sammen.
Bland sammen eggeplommer, sukker og Maizena.
Bland sammmen melk med eggeplommer, litt og litt. Hell tilbake i gryte, og kok opp i et par minutter.
Sett til avkjøling i kjøleskap.
Pisk kremfløte til stiv krem. Ha i vaniljekrem i kremen, og bland.
Del kaken i to. Legg den ene delen på fat, smør krem over, og legg den andre delen over.
Bottom:
150 grams soft dairy butter
100 grams of sugar
5 egg yolks
150 grams flour
2 teaspoons baking powder
1 dl whole milk
Meringue:
5 egg whites
150 grams sugar
150 grams almond flakes
Vanilla Cream:
3 dl milk
1 vanilla bean
3 egg yolks
100 grams of sugar
2 tbsp Maizena
2 dl whipping cream
Bottom
Beat butter and sugar.
Add the egg yolks - one and one - while the machine is running.
Mix together flour, baking powder and milk into the egg mixture, and mix until batter.
Put the mixture in the form lined with baking paper.
Beat egg whites stiff meringue. Add the sugar little by little.
Ha meringue over cake base. Sprinkle with almonds.
Bake at 180 degrees for about 25-30 minutes, in the middle of the oven. Put to cool.
vanilla Cream
Bring the milk with the seeds of the vanilla bean, and whip together.
Mix together egg yolks, sugar and Maizena.
Mix forth a milk with egg yolks, little by little. Pour back into the pot, and boil for a few minutes.
Set for cooling in the refrigerator.
Whip cream until stiff cream. Add the vanilla cream in the cream, and mix.
Split the cake into two. Add one part of fat, butter cream over and add the other part of.
