Mussels, Squid, Calamari, and Lemon Prawns.
Mussels, Squid, Calamari, and Lemon Shrimp
Ingredients:
- 1/2 kilogram of Prawns
- 1/2 squid
- 1/2 kilogram of mussels
- 1/2 kilogram of clams
- 100 grams of olive oil
- Juice of 3 lemons
- Zest of 1 lemon
- 200 grams of water
- 1/2 teaspoon of turmeric
- 1/2 teaspoon of tarragon
- Salt and pepper
- 1 small hot chili pepper
- 1/3 bunch of dill
- 1/3 bunch of parsley
Method:
1. In a pan, add 200 grams of water and bring the shellfish to a boil until they open, approximately 5 minutes. Once they open, remove them from the pan and leave the liquid and their juices in the pan.
2. In the liquid that remains in the pan from the shellfish, add the heads of the prawn and simmer for ten minutes. Then remove the heads and leave the liquid as it is in the pan.
3. Add the finely chopped squid to the liquid in the pan and add the olive oil, lemon juice, salt, pepper, tarragon, lemon zest and turmeric. Add the hot chili pepper and simmer for 4 minutes.
4. Add the prawn and simmer for 3 minutes.
5. Add the mussels and clams for 1 minute.
6. If the sauce is not thick enough, remove all the seafood and leave only the liquid. Add 30 grams of olive oil and simmer until the sauce thickens. Then, add the dill and parsley. Serve when the sauce is thickened.
