Craving Magnolia’s banana pudding but can’t get to NYC? I’ve got ya covered! This banana pudding is so fluffy and delicious, you can’t get enough of it. And to quote Gwen Stefani, this sh*t is BANANAS!
INGREDIENTS
1 cup Milk
2 Egg Yolks
3 tbsp (35g) Sugar
2 tsp (5g) Cornstarch
Pinch of Salt
1/4 tsp Vanilla Extract
1 cup Heavy Cream
1 box of Nilla Wafers
3 medium Bananas, sliced
1. Start by bringing the milk to a boil in a saucepan. Meanwhile, in a bowl, whisk yolks, sugar, cornstarch and salt.
2. Take the milk off the heat and let it cool slightly. Gradually pour them into the egg mixture, whisk constantly.
3. Return the mixture to the saucepan. On low heat, keep stirring until the custard thickens.
4. Transfer the custard to a bowl and mix in the vanilla extract. Let it chill in the fridge for at least 30 mins.
5. In a large bowl, beat heavy cream to stiff peaks. Gradually fold the custard into the whipped cream.
6. In a 9”x5” pan, begin layering the custard, wafers and bananas. Repeat the process, ending with a layer of custard. Sprinkle some crushed nilla wafers on top.
7. Cover with plastic wrap and refrigerate for at least 3 hours before serving.
