Ingredients:
* whole chicken
* salt
* pepper
* olive oil
* paprika
* dry white wine
Chorizo Stuffing:
* olive oil
* chorizo
* onions
* garlic
* thyme
* Cannellini beans
* sun-dried tomatoes
Gravy:
* pan juice
* lemon
* salt
* pepper
Recipe:
Step 1 - Soak the Cannellini beans overnight. Drain and rinse.
Step 2 - Boil the Cannellini beans for 30 minutes.
Step 3 - For the stuffing
1. Slice the chorizo. Cook in the pan for 3 minutes or until it turns golden brown.
2. Add onions, garlic, thyme, and Cannellini beans. Cook for 1 to 2 minutes.
3. Season with pepper and salt.
4. Add the sun-dried tomatoes.
5. Set these aside to cool.
Step 5 - Stuffing the whole chicken
Prepare the chicken.
1. Season the cavity with salt and pepper.
2. Fill it with the chorizo stuffing.
3. Place a whole lemon at the cavity opening.
4. Tuck excess skin over it.
5. Drizzle with pepper and salt.
6. Rub the whole chicken with paprika.
7. Add olive oil to the paprika. Rub into the chicken skin.
8. Tie the legs together with kitchen twine.
Step 6 - Pour dry white wine into a roasting pan. Season with salt and pepper. Add thyme. Put the chicken in the roasting pan. Season with pepper and salt. Cover the pan with foil.
Step 7 - Roast for 40 minutes in a preheated oven.
Step 8 - After 40 minutes, remove the lemon and foil from the chicken. Baste with the roasting juices, and turn the oven up. Roast for another 25 to 30 minutes until the skin is golden brown.
Step 9 - Remove from the oven and rest for 15 minutes before serving.
Step 10 - In making the gravy, squeeze the juice of the lemon that you removed from the chicken's cavity into the pan juices. Season with pepper and salt. Whisk together to make a light gravy.
