Rava Cake I Suji Cake I रवा केक
Here is the recipe for an eggless rava cake.
Semolina (rava or suji )and whole wheat flour make the cake healthier and tastier.
This cake can easily be made in a pressure cooker or microwave as well.
The cake is a perfect teatime accompaniment and can be refrigerated for over a week.

Recipe:
Rawa Cake
Preparation Time: 20 minutes
Cooking Time: 40 minutes
Serves: 4
Ingredients:
½ cup butter
1 cup powdered sugar
1½ cup semolina (rava / suji)
½ cup whole wheat flour
¼ tsp cardamom powder
¼ cup yogurt, whisked
1 cup milk
1 tsp baking powder
½ tsp baking soda
2 tbsp chopped tutti fruity
Ingredients For the Glaze:
5 tablespoon icing sugar
1 tablespoon lemon juice
1/4 Cup chopped pistachio
Method:
Mix together the rava, whole wheat flour, baking powder, baking soda and cardamom powder.
Add the curd and milk to the rava mix. Mix well and soak for 10 minutes.
Beat together the butter and sugar till fluffy. Whisk continuously, till the mixture turns silky smooth.
Fold in the rava mixture.
Dust the tutti fruity in a little flour and mix into the cake batter.
Mix well and transfer to prepared cake tin.
Bake the cake at 180 degree Celsius or 356 degree Fahrenheit for 40 minutes.
Remove the cake from the pan and cool down the cake completely.
Prepare the glaze by mixing together the icing sugar and lemon juice. Pour over the cake.
Sprinkle chopped pistachio all over the cake and serve.
